  • As a Demi Chef de Partie, you will support the Chef de Partie and Sous Chef in maintaining high standards of food quality, consistency, and kitchen operations within your designated section. You will demonstrate your culinary skills through hands-on food preparation while learning to supervise junior team members. Working collaboratively with the kitchen team, you will contribute to guest satisfaction, uphold hygiene and food safety standards, and support efficient kitchen operations.

Key Responsibilities

  • Assist in ensuring correct portioning, presentation, and garnishing of all dishes in line with brand and kitchen standards.
  • Support the preparation and service of food items (including soups, sides, desserts, and main courses), ensuring consistency and visual appeal.
  • Communicate menu specials and out-of-stock items to the Food & Beverage service team during service periods.
  • Prepare potentially hazardous foods at the correct temperatures in accordance with HACCP guidelines.
  • Maintain high standards of personal hygiene, including proper hand sanitation, use of hairnets/hats, and appropriate footwear.
  • Follow food safety and handling procedures, including FIFO, labelling, dating, product rotation, and cold chain compliance.
  • Assist in checking food quality and report any products that do not meet specifications to the Chef de Partie or Sous Chef.
  • Help monitor food preparation levels and portion control to minimize waste and support effective stock usage.
  • Communicate clearly with senior chefs during busy service periods to ensure smooth and timely guest service.
  • Operate kitchen equipment such as ovens, grills, fryers, and stoves safely and correctly.
  • Check and monitor food and equipment temperatures using thermometers and thermostats and report any faults immediately.
  • Support daily food quality monitoring using HACCP records and production charts.
  • Prepare cold food items including salads, sandwiches, dressings, and condiments as required.
  • Assist with general kitchen cleanliness, organization, and operational efficiency.

Qualifications

  • Level 2 Food Hygiene and Safety for Catering Certificate
  • Food Allergy and Intolerance Training Certificate

  • Perform regular safety checks and facility inspections to ensure full compliance with Health & Safety regulations, including COSHH guidelines.
  • Certified Pool Responder, monitoring the pool area and responding swiftly and effectively to any incidents or emergencies to ensure guest safety.
  • Prepare and restock spa amenities such as towels, robes, refreshments, and other guest essentials to support a seamless spa journey.
  • Assist guests in a discreet and professional manner, providing support with lockers, facilities, and general spa information.
  • Monitor guest flow in and out of wet and relaxation areas, ensuring capacity limits and cleanliness standards are consistently upheld.
