- Position Summary
- As a Chef de Partie – Pastry, you will assist the Sous Chef in ensuring the quality, consistency, and production of pastry and dessert items. You will showcase your culinary expertise by personally preparing dishes while leading the pastry team and managing all dessert-related functions. Collaborating with the team to enhance guest satisfaction and maintain operational standards within budget, you will ensure compliance with sanitation and food safety regulations. Additionally, you will support the development and training of team members to achieve excellence.
- Responsibilities – Your Role Includes
- Ensure accurate portioning, presentation, and garnish for all pastry and dessert items.
- Plate desserts and accompaniments with attention to detail and visual appeal.
- Communicate daily specials and unavailable items to Food & Beverage staff promptly.
- Prepare all pastry products following HACCP guidelines and maintain correct temperatures for potentially hazardous ingredients.
- Adhere to strict personal hygiene standards, including proper handwashing, wearing hairnets/hats, and appropriate footwear.
- Comply with food safety and handling procedures, including product rotation (FIFO), labeling, dating, and maintaining organized storage areas.
- Monitor the quality of pastry items and report any deviations from specifications to the manager.
- Control waste by monitoring production quantities and portion sizes.
- Communicate with the Sous Chef during peak periods to ensure smooth service.
- Operate pastry-specific equipment such as ovens, mixers, proofers, and tempering machines safely and efficiently.
- Check and record temperatures of appliances and products using thermometers, reporting any issues immediately.
- Maintain HACCP documentation and production charts throughout the day.
- Prepare cold desserts, sauces, garnishes, and accompaniments with precision.
Qualifications
- Level 2 Food Hygiene and Safety for Catering Certificate
- Food Allergy and Intolerance Training Certificate
